Week 1 Menu
By FoundTime On November 28th, 2010I have been working with a weekly menu for some time now and it really has helped answer that dreaded question, “What’s for dinner?”. In my family I only plan dinner for 5 nights out of the week. We typically have leftovers one night and eat out another during the week. Even though we have our favorites I am always looking for new and interesting recipes to try. I love incorporating local and seasonal fruits and veggies whenever I can.
Here is my menu for this week. Check back ever Monday for my weekly menu.
Monday
Rigatoni with Roasted Sausage and Broccoli – I found this recipe on RealSimple.com and my husband can’t get enough of it! I even make a double batch to take leftovers for lunch the next day.
Tuesday
Spicy Slow Cooker Black Bean Soup – On a recent trip to Costa Rica I ordered a bowl of Sopa negra and I fell in love. Since then I have trying to recreate the recipe. This one that I found on Allrecipes.com really comes close. I like to serve mine with a hard boiled egg and fresh cilantro just like they did in La Fortuna.
Wednesday
Our Wednesday is busy this week so we will probably just have leftovers or throw in a pizza. I always like to have some staples on hand like ingredients for pizzas, tacos, salads and other quick meals. Since tonight’s meal is easy I like to go ahead and cook my rice for tomorrow’s dinner. Fried rice is always best when you use cold rice.
Thursday
Fried Rice with Cilantro and Asian Lettuce Wraps – My husband and I love Asian food and the rice and wraps really compliment each other. Sometimes I even cook the beef in the lettuce wraps the night before too. Doing some prepping ahead of time makes this a quick meal.
Friday
Friday is fajita night and I found a great recipe that uses sweet potatoes and poblano peppers. I love incorporating hearty root vegetables during the cold winter months.
Saturday
This is our night to go out and have dinner on the town. Sometime we choose to save our money from one week if we know that we are going to splurge the following one.
Sunday
In addition to root veggies I love cooking with different kinds of squash too. This chicken and roasted acorn squash recipe has a great nutty flavor and is fairly healthy.
